Rocky Road Squares

Another dessert in so short a time!   Rocky Road Squares this time.  I probably wouldn’t have got around to making these except I came across Sugar High Friday, a blogging event started by Jennifer, The Domestic Goddess and it gave me the push to give it a go.  The theme this month is bite-sized desserts, hosted by Aparna of My Diverse Kitchen.

Now,  one of my first ever posts was chocolate truffles and they fitted the description perfectly and I could have made them again, they are delicious, but there would have been no challenge in that.  These squares may be simpler, but until today, they were just another of those delicious bites I’d eaten but never made.  The idea came from Nigella Lawson in Nigella Express but I’ve adapted it a little.  As I was expecting visitors and I wanted to be able to please everyone I divided the tray into four sections, one decorated with macadamia nuts only, one with sultanas only, one with nuts and sultanas and one quarter without anything on the top.  This is how I made it.

Ingredients

250 g dark chocolate

2 tbsp golden Syrup

100g butter

1 tsp vanilla extract

18g mini marshmallows (would use a bigger pack next time)

200g digestive biscuits, crushed

30g macademia nuts

30g raisins

How to make Rocky Road Squares

1. Melt chocolate, butter and golden syrup in a bowl above a pan of boiling water.   When melted and thoroughly combined add the vanilla essence.

2. Add the crushed biscuits to the chocolate.  Stir to combine then add the marshmallows and stir in too.

3. Line a tin with baking paper and add the chocolate mixture.   Dividing the tin into quarters,  decorate one with macadamia nuts only, one with sultanas only, one with nuts and sultanas and one quarter without anything on the top

4. Leave to cool.    When cool put in the refrigerator to finish setting.

5. Cut into bite sized squares and serve.
